Makes about 8 waffles
1 cup buckwheat flour
1 cup brown rice flour or (gluten free) oat flour
2 tablespoons ground flax seeds
1 tablespoon ground chia seed
1 ½ teaspoons ground cinnamon
1 teaspoon baking soda
1 cup buttermilk (or substitute almond milk or organic 2% milk)
1 cup plain Greek-style yogurt
½ teaspoon vanilla extract
1 tablespoon olive oil
Preheat waffle iron and coat lightly with oil, butter, or non-stick cooking oil spray.
Whisk together dry ingredients (flours through baking soda) in large bowl. In another medium –sized bowl, whisk milk, yogurt, vanilla, oil and eggs. Combine wet and dry ingredients until just mixed. If batter appears too thick, slowly add more milk or water.
Ladle or spoon about 2/3 cup batter into waffle iron, close lid and cook until just golden.
