Our super fun, super fit friends, Tom & Dawn Terwilliger, are joining us this year for Superbowl Sunday. We’re planning on an epic rivalry and to help balance the healthy indulging that I’m sure we’ll be enjoying during the game, we’ve raised the stakes a bit by throwing in the following:
1. When the other team scores a field goal or touchtown, you have to run the equivalent number of wind sprints – for example, a 3-point field goal = 3 windsprints up the driveway.
3. Other team scores a safety – 10 burpees
4. Every time your team receives a penalty call – 5 burpees or jumping jacks
Half Time: Dance along with Katy Perry
Same as the first, but it may be getting dark depending on where you live, so instead of windsprints up your driveway, do the equivalent number of push-ups/mountain climbers. This looks like one push up followed by 5 mountain climbers. If you need a little bit easier task go for jumping jacks.
Think baked sweet potato “fries” with turkey burgers, chunky avocado salad (served alone or in pita pockets – see recipe below), stay hydrated with water (not booze) and for every alcoholic beverage you consume make sure you alternate with 2 glasses of water.
Avocado Pita Pockets
2 tablespoons fresh orange juice
1/2 teaspoon Tabasco green pepper sauce
¼ teaspoon ground coriander
1 cup chopped tomatoes
1/2 cup roasted red peppers, chopped
1 medium cucumber, peeled, seeded, and chopped
4 radishes, thinly sliced (or sub scallions)
4 small whole wheat pita breads (or serve on salad greens)
4 pieces red leaf lettuce
Cut avocados in half and remove pits. Scoop out with a large spoon and then slice each half into four slices. Place in bowl. Add orange juice, green pepper sauce, and coriander. Toss gently to coat avocado. Add tomatoes, red bell pepper, cucumber and radish and toss again.
For Pita: Cut top part of pita bread (about 1/3 of the circle). Gently stuff with 1/4 of the avocado mixture. Season with salt and pepper as desired. Add 1 red lettuce leaf and enjoy.
