1 cup blanched almond flour
¼ teaspoon sea salt
½ teaspoon baking powder
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground ginger
3 large eggs
3/4 cup pumpkin puree
¼ cup maple syrup
1/3 cup chopped pecans or walnuts.
Options: Top with additional chopped pecans or walnuts
Preheat oven to 350. In a large bowl, whisk together almond flour, salt, baking powder, and spices.
In a separate bowl, whisk together until smooth: eggs, pumpkin, and maple syrup.
Stir wet ingredients into dry ingredients. Then stir in nuts (optional).
Scoop into a small loaf pan coated with cooking oil spray. If desired, top with chopped nuts.
Bake for approximately 45 minutes.
Cool on a wire rack for at least 45 minutes to an hour before removing from pan.
Serves 8 to 10
